I am mad about everything so tomorrow I am going to try baking a coffee cake with beetroot juice. I do this because I’m evil and want something else to regret.

The finished cake’s consistency ended up a bit undercooked - I’ll have to tweak the recipe a little bit next time - but all in all it turned out quite good.
Very subtle flavour, could actually probably have used some sort of spice in it, though I’m not sure what would do well with beets. Cinnamon? Nutmeg? Ginger?
